Add Egg Yolk and Vanilla: Mix in the egg yolk and vanilla extract, continuing to beat until everything is well-combined and the mixture looks creamy.

Incorporate Dry Ingredients: Slowly add the 2 1/4 cups of flour to the wet mixture. Mix at a low speed or by hand until the dough forms. It should be soft but not sticky.

Shape the Dough: Roll the dough into small balls, roughly the size of a tablespoon. Roll each ball in the remaining 1/2 cup of granulated sugar to give them a crisp exterior.
